Shred jackfruit partially into smaller chunks. It will be easier to shred further after cooking
Heat Olive Oil over medium heat. Add jackfruit and saute for 5 minutes.
Add BBQ Sauce and water and coat the jackfruit by stirring evenly.
Cover Pan and simmer on medium-low heat for about 25 minutes, stirring occasionally (you can start preparing cole slaw while jackfruit is cooking). It will become tender and you can use 2 forks to tear the jackfruit apart to further resemble pulled pork.
To Prepare Cole Slaw
In a large bowl, toss shredded cabbage, vegan mayonnaise and apple cider vinegar until fully mixed together. Add salt and pepper to taste. Set aside.
To Assemble
On a bun, put bbq “pulled pork” jackfruit and prepared cole slaw. For an optional add on, mix avocado and more vegan mayo to create an avocado/mayo spread. Enjoy!
