Jackfruit “Pulled Pork” Vegan Sandwich

The sauce absorbs SO well into the jack fruit and the consistency is totally pork-like. One of the main reasons I like this recipe is because you are cooking with a fruit that you can buy in a can, which means that it is essentially a non perishable option that you can buy and keep in your cupboard for whenever you get in the mood to make a BBQ “pork” sandwich. I like to have a few go-to options that can be essentially all done using pantry foods.

To start this recipe, you are going to drain your can of jack fruit and pat dry with a paper towel or dish towel. using a fork, shred the jackfruit partially into smaller chunks. Don’t worry about being too thorough about this, it will me much easier to finish the shredding after it is done cooking.

Now heat up a small amount of olive oil over medium heat in a medium or large pan. Once hot, add in your jackfruit and saute for just over 5 minutes. Now add in your BBQ Sauce and water. Mix all ingredients together in the pan until completely combined.

Turn the stove heat to medium-low, cover the pan with a lid, and simmer for 20-25 minutes. Be sure to check on it every so often and stir the contents. While the jack fruit is cooking, you can prepare the coleslaw.

For the coleslaw, all you need to do is add the shredded cabbage, vegan mayonnaise and apple cider vinegar into a large bowl and mix until fully incorporated together. Taste, and add additional salt and pepper if desired.

Once your jackfruit and sauce has simmered for about 25 minutes, remove from heat and inside the pan use 2 forks to shred the jackfruit again until it reaches the consistency and appearance of pulled pork. Now you can add the coleslaw and jackfruit “pulled pork” to a sandwich, or enjoy separately as side dishes.

Ingredients
  

Vegan "Pulled Pork"

  • 2 Cans Green Jackfruit in brine
  • 1.5 Cups BBQ Sauce
  • 1 tbps Olive Oil
  • 3 tbsp Water
  • 1/2 Onion for garnish

Vegan Cole Slaw

  • 1 Bag Shredded Green and Red Cabbage
  • 1/4 Cup Apple Cider Venegar
  • 1 pinch Salt and Pepper to taste

Instructions
 

To Prepare Pulled Jackfruit

  • Shred jackfruit partially into smaller chunks. It will be easier to shred further after cooking
  • Heat Olive Oil over medium heat. Add jackfruit and saute for 5 minutes.
  • Add BBQ Sauce and water and coat the jackfruit by stirring evenly.
  • Cover Pan and simmer on medium-low heat for about 25 minutes, stirring occasionally (you can start preparing cole slaw while jackfruit is cooking). It will become tender and you can use 2 forks to tear the jackfruit apart to further resemble pulled pork.

To Prepare Cole Slaw

  • In a large bowl, toss shredded cabbage, vegan mayonnaise and apple cider vinegar until fully mixed together. Add salt and pepper to taste. Set aside.

To Assemble

  • On a bun, put bbq “pulled pork” jackfruit and prepared cole slaw. For an optional add on, mix avocado and more vegan mayo to create an avocado/mayo spread. Enjoy!
