This oatmeal is avoids processed sugars and instead uses maple syrup and figs for a healthier option to sweeten the dish. You can make the icing in advance for quicker assembly morning of.

Cinnamon Roll Oatmeal

Ingredients
"icing" sauce
- 1/4 cup cashews I soak this is hot water 10 minutes before I make this oatmeal. You can also blend dry cashews but I find soaking cashews first makes the sauce more creamy.
- 2 dates add more or less depending on how sweet you want it
- 1/2 cup unsweetened vanilla almond milk you can use any other non-dairy milk, or omit for water
- 1/4 cup water omit if you want a thick sauce
- 1/2 tsp vanilla extract
- 1/4 cup cinnamon granola
Oatmeal
- 1/2 cup oats
- 1/2 cup water
- 1/2 cup unsweetened vanilla almond milk you can use any other non-dairy milk, or omit for water
- 1/2 tbsp ground cinnamon
- 1/2 tsp vanilla extract
- 1-2 dates varies based on how sweet you want your oatmeal
Instructions
"icing" topping
- mix all the "icing" sauce ingredients together in a blender, except for the granola. Let it sit aside while you make the oatmeal so it has time to slightly thicken
oatmeal
- mix the water, almond milk, cinnamon, vanilla extract and dates in a blender
- pour your oats in a small pot with the mixture (not the "icing" topping)
- cook oats for 5 minutes or until it reaches your desired consistency
- pour the "icing" topping over the oatmeal and top with cinnamon granola.
